Grand Marnier Crepe by Crepe Catering Miami is a luxurious light dish fit for a King. When I’m in the mood for a light gourmet dessert crepe, this is my absolute favorite. This is my take on the recipe of “Crepe Suzette”. Once your crepes are made, in a large none stick pan, place on medium heat and add 2 tbl. spoons of butter to melt (must be real butter not margarine) and 1 tbl. spoon of orange zest then add 2 tsp. of sugar to caramelize with your beurre butter (light brown butter melted)and zest. Immediately place your crepe in the pan and flip it on the other side in order to saturate the crepe completely. Now splash some fresh squeezed orange juice (1/2 ounce) on the crepe in the pan for it to caramelize. This crepe dish is preferably cooked on a gas stove top in order to take advantage of the fire to flambe the crepe BUT if you don’t have a gas stove top, you can still make this dish but it won’t be a flambe crepe. You can still caramelize your crepe. NOW once you see that the orange juice has caramelized you then quickly splash some Grand Marnier (1 ounce) on your crepe and then tilt the pan for it to catch fire from the stove top on to the pan. Please be careful not to get BURNED. Once the fire on the crepe has died down, now your crepe should be beautifully caramelized and golden brown. Simply place on a dish of your choice straight from the pan with all that delicious sauce called “Beurre Suzette Sauce”. Repeat as many times as you want for multiple crepes on your plate. Now garnish with powdered sugar (if you like) and a dash of cinnamon with some tangerine or orange slices (cut thin) and orange zest. I sometimes (not all the time) add a small thin drizzle of warm Nutella on top for a delicious treat. The original Crepe Suzette does not take powdered sugar, cinnamon or Nutella. But this is my recipe and I must say it is very addicting !! This is Chef King saying “Bon Appetit”!! Until the next time.
